Acidity, measured as the quantity of KOH (or NaOH) required to neutralize the fatty acids of 1 g of product [To be confirmed : assuming that the fatty acids have the same molecular weight as palmitic acid. It is expressed in % of free fatty acids (considered as palmitic acid) per g of sample.]
