Acidity in wheat and wheat products measured by colorimetry of the free fatty acids in a 95% ethanol solution, centrifugated and titrated with NaOH. It is an assessment of the conservation of the product. It is expressed in g of sulfuric by 100 g/DM. French AFNOR method NF ISO 7305.
